I have a year old fat tail that stays in his humid hide all the time unless he's eating. Is this normal?

Do you have any other hides throughout the enclosure?
Could be he is scared and can't find any other place to hide.

He has two other hides in his cage. He's very sociable with me and my children. He doesn't act scared at all. It doesn't seem like it bothers him if I remove the humid hide, but when I put it back, he's like "HEY BUDDY! Where ya been??" and then hangs out there until I take it out again or feed him...

Fat-Tails are more humid loving than say a Leopard gecko would be.

Yeah, I think he's fine...just likes it in there. I've set up another small humid area for him too.
