My plan is to make a groove within pieces of 3/4 thick x2 wide that are 1/2" deep. Here's what the front of the cage would look like. I'm thinking about having 3 hinges on the bottom and 2 latches on the top. Look good?

I would suggest 1/4 inch plate glass. The acrylic will scratch up. It will also have a flex to it that the glass won't have. And glass is cheaper.
If I understand you intend to have hinges on the bottom so the door will open outward and down? Thats what I did and I regret it. The door is ALWAYS in the way of doing anything you need to do since you almost have to crawl into the cage to maintain it.
I would actually suggest making the door in two sections and having it swing out to the sides.
