Hey! To address your question about butter I use two brands, earth balance for a buttery taste and if I can get away with using the cheap Giant Store brand (its $0.79 for four sticks) I do. Both are great replacements. I don't make too many cakes but plenty of cupcakes, you should check out the book "vegan cupcakes take over the world" it's my favorite dessert book! I easily veganize any recipe with those butters!
