I'm having trouble with egg fungus, and I heard you could give them a quick dip in a 5% bleach solution. Does this work or will it just kill the embryos?

Never heard that one. 5% bleach is a solution for disinfecting hardware, not putting on living animals.
I know some people do use fungicidal foot powder on eggs.
