How big should a grown leo enclosure be?

From what I've read, a ten gallon aquarium is the absolute minimum for a single leo.

As long as you can handle the larger amount of work on keeping the tank perfect, the bigger the better. But a 10 gallon is definite minimum, though I prefer 15 gallon for definite minimum due to Leopard Geckos do get pretty bulky for their size.
