Ambient Temp Vs Gradient

How important is ambient air temp vs. a temperature gradient. In order for me to maintain the propper temp gradient of the surface (95f on the hot side and roughly 74f on the cold side the abient air temp stays at 74f. If I bring the air temp up into the 80s the gradient goes from 105 to 84-84 at the cool side. Which is more important?
