She might not eat while she's shedding and she might need a few days to get used to the changes of environment...
I'd pull the walnut regardless of the fact that it may stress her since i've seen how bad that stuff can been in person, one more change is okay, just put her on something solid that you know is safe until you have checked all of your other flooring options.

Also make sure to bump up her humidity to aid in shedding or she'll be pretty stressed when you have to pick all the skin off of her toes for her.

You may not see any since they eat the shed skin!
This may be another reason for the lack of appetite. Many species will not eat during shed. And if she has shed some and eaten it she may just not be hungry.

My little one often eats less before a shed, and is usually dull for a couple of days, then turns from dull to very pale white, and then POOF, the next morning, he's bright and shiny and HUNGRY.

As to the crickets and mealworms...Lefty was more inclined toward the crickets at first too (1/4 inch), but now usually prefers the mealworms - once she gets used to things, she'll probably pick up the pace.

As to set up: I have my heat pad under the hut on the "warm side" of the tank, and a separate moist hide on the cooler side. The moist hide is just a plastic dish with a top and a door cut into it with wet paper towels in it. I spray it down to keep it humid and before a shed, Lefty's in it a lot. As far as I know, it's good to seperate the moist hide from the dry hide so that there is an option for how they feel. And it definately doesn't cost a thing to sepearte - I used a container from some water chestnuts I got for a stir fry!

And to throw in my 2 cents on substrate - I completely understand being frustrated! When I first set up Lefty's tank, the girl who sold me everything (who also owns several of her own Leopard Geckos) personally recommended a sand as what she herself uses...then I picked up a clay substrate that seemed good and cool...and all money aside, I ended up with a regular ol' green "carpet" ...but the change was HUGE. Lefty (who had a broken leg when I adopted him) became more active, ate more, and now comes out of his hut all the time...so it became totally worth it.

It is interesting that you say that Lefty got more active after you put in the mat as substrate. Last night was the first night that Anna came out quite a few times. More than she ever has before. This could be coincidence but it is still very interesting.
