Some say "leave them be" others say "handle them." I think it depends on the individual iguana; like people, some are more adaptable than others. If your ig seems to take well to being handled (and it does seem that way from your description), then do. But keep it limited for the first few weeks.
Not eating is common, but don't fear -- he won't let himself starve.
I'm glad you've done some research (Green Iguana: The Ultimte Owner's Manual is the best care guide, IMO, that you can get), you're about a hundred steps further along than the average iguana owner.
