I use to freeze baby rabbits my just putting them in the freezer. I don’t know if this is the right way to do it or not. But a rat might fight you a bit more than a baby rabbit. I was giving them to a zoo and this is what I was told to do.

We buy ours pre-frozen too, but my partner has always wanted to breed his own. If we were to do this then I believe co2 is the most humane way to kill. Whatever you do, please make sure the rodent is properly dead before freezing - freezing is an extremely inhumane and cruel way to kill any animal. Until recently it was believed - by myself as well - that freezing was a humane way to kill reptiles, but in actual fact, when an animal is frozen to death, it dies a very slow and painful death, where ice crystals form on its brain before death.

I would like to find the best way to put them to sleep in a humane way
I don't want to freeze them to death I would not want to die that way
I just need some info on what type of equipment to use I thought about a
paintball co2 tank and remote hose in a plastic tub do you think that would
work thanks everyone

CO2 will work fine and humanely. Just one thing, keep the hose between the cannister and the tub as short as possible to retain effectiveness. The longer the hose, the more air that is mixed with the oxygen.

Yes I guess Fran is the one to talk to here LOL I really can't help you, I'm about as clued up as you, I just know that co2 is humane. But I did want to say I really respect you for researching this properly and taking the rats into account and not just the reptiles. Too many people seem to forget that the rodent is an animal too, and while it is food for our snakes it should still be treated with kindness and respect.
