Vegetable Question

Has anyone taken fresh vegetables (not greens), chopped them and then put them in the freezer for future use? With the garden starting to come in I’m going to have a surplus of summer and zucchini squash, green pepper etc from our garden. Soon the butternut and acorn squash, beans etc will be available at the farmer market. I’m thinking ahead to the winter month when fresh vegetables are very costly here.

I see no reason why you can't. In many cases frozen is more nutritious than fresh as they freeze same day as picked. By the time fresh is packed and delivered to the supermarket it is usually days old and lost alot of it's value.

The solid veggies will be fine frozen. However if most of the diet is frozen you will need to add some thiamine or brewers yeast. Freezing destroys thiamin
Greens don't really freeze that well. they tend to turn to glop!

My family freezes and cans every year, we have a huge "garden" (I grew up on a farm). Make sure you cut it up to a smaller size, and freeze ASAP, the fresher the vegetable, the less chance of freezing issues. Also remember to squeeze all the air out of the bag, it reduces chance of freezer burn.

We don't freeze leafy greens often, but if you dry them so there is no surface moisture and then freeze them, they should retain there solidity a little better. Don't freeze them for long, they will get bad FAST.

And of coarse, use brewers yeast once you take them out, and allow them to air thaw (in the fridge is best, takes a long time, but works lowers chance of uneven thawng and rotting) so you don't partially cook or denature them.
