I use whatever natural foods I can find in the back of my cabinets that nobody's going to eat. My b/f mom insist of keeping her food in the cabinets where it always gets these little flour bugs. So, I do periodic checks and whatever has those little bugs, becomes part of my mealie bedding. The little flour bugs are totally harmless to the mealies, and the mealies to them, so it works out well for me because my frog really likes the little bugs. Typically my bedding consists of wheat flower, old fashioned oatmeal, sunflower seeds(unsalted) corn meal, pastas, rice,...................I use variety. They also seem to like cork, the beetles especially. I dunno if they eat it or just chew holes in it, but it keeps them busy. I use carrots, and sometimes celery, but I remove them when they are no longer crisp. I never had luck with potatoes. I don't know if it's the warm climate I live in or what but the potatoes always mold pretty quickly killing the whole colony.

Ventilation is key, though my success with stuffing a couple thousand pupaes in one dresser drawer worked out 98 percent perfectly fie, ventilation is key.

I keep my beetles on many substrates I have recomended to you, and use 2 long papertowel rolls, and a small bar of corkbark. I find that when they are able to hide in the dark they breed more. Plus they are gathered up there in a better place for warmth and comfort.
